Fish and brewis is a traditional Newfoundland meal consisting of codfish and hard bread or hard tack. With the abundance of cod around the coasts of Newfoundland and Labrador it became synonymous with many Newfoundland households as a delicacy to be served as a main meal. The recipe may vary from community to community or even household to household, but the ingredients are always the same. The typical recipe calls for salt fish that is soaked in water overnight to reduce the salt content of the fish, and the hard bread is also soaked in water overnight. The next day, the fish and hard bread are boiled separately until tender, and then both are served together. The traditional meal is served with scrunchions, salted pork fat which has been cut into small pieces and fried. Both the rendered fat and the liquid fat are then drizzled over the fish and brewis. Fisherman's brewis is the same as fish and brewis, but the fish and bread are chopped while hot and mixed together with the scrunchions, and often fresh cod is used instead of salt cod. Drawn butter is sometimes used instead of scrunchions. Drawn butter in this instance is a mixture of melted butter and chopped onions that is thickened by flour in a saucepan, then served hot over the fish and hard bread.

Alaska pollock or walleye pollock is a species of the cod family Gadidae. Alaska pollock is a semipelagic schooling fish widely distributed in the North Pacific with largest concentrations found in the eastern Bering Sea. While related to the common Atlantic pollock species of the same family, the Alaska pollock is not a member of the same Pollachius genus. Rather, recent research suggests that it is more closely related to Atlantic cod, and that Alaska pollock should be moved back to genus Gadus in which it was originally described as Gadus chalcogrammus. Furthermore, Norwegian pollock, a rare fish of Norwegian waters, is likely the same species as the Alaska pollock.
The lingcod, Ophiodon elongatus, or ling cod, is a fish of the greenling family Hexagrammidae. It is the only extant member of the genus Ophiodon. A slightly larger, extinct species, Ophiodon ozymandias, is known from fossils from the Late Miocene of Southern California. Ophiodon elongatus is native to the North American west coast from Shumagin Islands in the Gulf of Alaska to Baja California, Mexico. It has been observed up to a size of 152 cm and a weight of 59 kg. It is spotted in various shades of grey. The lingcod is a popular eating fish, and is thus prized by anglers. Though not closely related to either ling or cod, the name "lingcod" originated because it somewhat resembles those fish. The lingcod's flesh is sometimes blue-green prior to cooking.
Gadiformes are an order of ray-finned fish, also called the Anacanthini, that includes the cod and its allies. Many major food fish are in this order. They are found in marine waters throughout the world, and there are also a small number of freshwater species. Common characteristics include the positioning of the pelvic fins, below or in front of the pectoral fins. Gadiformes are physoclists, which means their gas bladders do not have a pneumatic duct. Buzzards Bay is a bay of the Atlantic Ocean adjacent to the U.S. state of Massachusetts. It is approximately 28 miles long by 8 miles wide. It is a popular destination for fishing, boating, and tourism. Since 1914, Buzzards Bay has been connected to Cape Cod Bay by the Cape Cod Canal. Similar preparations are found in other Mediterranean countries such as Italy, Portugal and other regions of Spain where dried salt cod is also enjoyed. In Minorca sometimes artichokes may be added. In Marseilles and Toulon, crushed garlic is added to the dish. Potato is also added to brandade in France and Basque Country, but not in Catalonia. Neither cream nor milk are included in traditional recipes in Occitanie or Spain.
